Making up this weeks meal plan is a bit of a challenge. My special needs brother is going away this week on a trip, so we’re going to be more likely to be out in the evenings than normal. Especially since we do not often get this level of freedom it’s possible we’ll find ourselves going out after my husband is finished work every night. Being out of the house at meal time is the number 1 reason we eat out. I certainly don’t want us to be eating out every night though so I’m still going to attempt a meal plan.

Thursday – Salsa Pasta Salad

This week I actually kept really well to the meal plan I had set out. My only real stumbling block was that I couldn’t find any eggplant at the store, so I ended up making my Moussaka with mushrooms instead and it actually turned out really well.
